Happy October! How are things? I'm so looking forward to the holidays this year! I guess having the right people in your life does make all the difference... As the weather changes I feel more like cooking. I still have no time, but at least now I consider it. Lol. My Basic Recipe is to just throw stuff in the food processor and be amazed that it tastes good, lol #TrueStory
But I actually did better on this one. These are NOT raw but they are VEGAN. Quick & Easy Cookies 1 Cup Dates (Soaked for at least 10 minutes and drained) 1 ripe banana (peeled, of course) 4 tbsp creamy peanut butter (your choice of organic brand...I use whats handy) 1 Cup Almond flour 1 cup Uncooked Oats (Gluten Free) Processes the dates till small, add everything else. Process. it will look gooey and depending on your PB too gooey...so add a dash more flour. Place in fridge as you preheat the oven to 350' When oven is ready drop by tablespoon onto parchment paper (I was out and had to use foil today.) You may smash them down (They will be sticky but thats fine) or leave as a "drop" cookie. Makes, depending on size, approx. 25 cookies. Comments are closed.
