Today, we're all set to observe the 'Ring of Fire' annular eclipse as it makes its journey across the United States. The eclipse is expected to reach its zenith over the Gulf Coast of Texas, roughly between 10:00 - 11:00 a.m. CT. We've planned out this adventure and are excited to be part of the watch party! Before we leave, I've made some snacks to keep us going throughout the day. I whipped up a batch of breaded tofu, (cooked in the airfryer,) banana /peanut butter smoothies, sliced veggies and hummus. It looks like its going to be an amazing day, with clear skies and cooler temps. Finally the heat wave is breaking! I've got to pack the car and then we are off.
More about this adventure soon~ Happy Friday! I am continuing the search for a vegan banana pudding / banana bread mash up. It's tough work but someone must try all these samples, lol. Of course, I used banana nice cream for the base, added in more sliced bananas, coconut whipped cream, walnuts and made a maple sauce for the topper. It was actually amazing, but may require more sampling.
Have a great weekend! I went out today to purchase some packing tape and while I was wandering around the store I noticed how little natural (real) food there was. Instead, the aisles were full of colourful manufactured food-like substances.
Don't get me wrong, I totally understand why people buy this; from cost to connivence, but there is nothing healthy here. It's July! The summer is truly here, full of possibilities and never-ending heat. I gladly say goodbye to June, as I'm more than ready to move forward now. No more dragging my feet, feeling unsure about the future and the correct path forward. There are endless possibilities this month; from lazy beach days to gathering with old friends for fun-filled backyard parties. Let's dive into the charm of July and all the exciting experiences it brings. Sunny Adventures: July brings with it sun-drenched days that beckon us outside. Whether you're seeking sandy beaches or the tranquil beauty of lush forests, this month offers endless opportunities for adventure. Dive into the water, hike scenic trails, or simply relax under the shade of a tree with a good book. Let July be your passport to nature's wonders, and let the sunshine heal your soul. Let's eat all the summer vegetables! July is a paradise for food lovers, offering an abundance of fresh produce and delectable treats. Succulent berries, juicy watermelons, and crisp vegetables fill the farmers' markets, inviting us to savor the flavors of the season. Grab your apron, fire up the grill, and experiment with new recipes. From cooling salads to frozen delights, July is the perfect time to indulge in fresh food adventures. Time seems to slow down in July. With the excitement and busyness of the summer, I also seem to slow down more. Sounds like a paradox, but as my birthday approach I always become more reflective. What about you? How do you approach July? I'm more likely to linger on the deck or take longer after dinner walks. I also journal more, study more and spend more time just thinking over the past. For me, July is a great time to find a peaceful spot to meditate, journal, read or engage in activities that bring joy and tranquility. Yes, it's hot as Hades outside, but somehow we can make this work. I'm committing to being more flexible now and slowing down on work projects as well. No more trying to do everything at once. The seasons are changing fast now and April was a whirlwind month. I was in Texas and Florida and few other places I will share soon. I ate some amazing food, meet cool people and just really had a great time traveling this month. I've been working so hard that it feels like this break was long overdue. +I'm actually traveling today and Uber excited to share these latest adventure with you! I'm busy doing the pre-packing and gathering up for the upcoming trips. This isn't exactly my favorite part of the travel experience, but it's probably the most necessary. My itinerary is not set yet but I have a good outline of where, what and when. I'm still researching (I will share some of my findings soon) and gathering items for the trip. I have more to do, but I'm chipping away on my list day-by-day. It's been my experience the more prepared you are for your trips the more fun you have. I mean we can't prepare for every thing, but we can insure we don't run out of supplements and spend quality vacation time hunting them down. This is especially true when you are in a different country. I want to have fun and relax, not stress over vitamins, lol Speaking of stress-free...I'm gather a list of Vegan places to try in London and will soon be sharing my findings here.
