Are you craving popcorn? I am and I blame it on autumn. For me autumn is a season associated with comfort and coziness. It's the time for warm sweaters, cozy blankets, and gathering around the fireplace. I want to watch my favourite old movies and drink hot coco and snack. Popcorn fits perfectly into this scenario as a light, easy-to-make, and warm snack. It also adds to the overall feeling of comfort and home. Its crunchiness and warm buttery aroma make it an ideal treat during those chilly evenings or any time. Carmel popcorn seems to be an even better treat. But OMG the amount of sugar is so dang awful. But what if we could cut the refined sugar and take it up a notch and turn it into a vegan treat? Plus add maple AND cinnamon for a super cozy Autumn vibe? Are you ready to try this amazing popcorn?? Vegan Maple Cinnamon Popcorn:
Ingredients: - 1/2 cup popcorn kernels - 2 tbsp coconut oil - 2 tbsp maple syrup - 1 tsp cinnamon - A pinch of salt Instructions: 1. Pop the popcorn kernels using your preferred method (air popper or stovetop). 2. In a small saucepan, melt the coconut oil and maple syrup over low heat. 3. Stir in the cinnamon and a pinch of salt. 4. Drizzle the maple-cinnamon mixture over the popped popcorn and toss to coat evenly. 5. ENJOY! This vegan snack recipe are perfect for satisfying your cravings during the autumn season. Enjoy these tasty treats without refined sugar! Hey! How are you? If the rest of this year passes as fast as Janurary did then I'm in serious trouble! I had guests for 2+ weeks and worked. The house was full of people, plus some stayed down the street at a B & B. So there was lots of laughing, eating and visiting going on! It really was an amazing visit! I blogged about some movies to watch with your BFF here and also reviewed a random movie a friend recommended to me here. I also managed to do some used book shopping. I read a bit and owe you several reviews. Hopefully later this week I will get those out. The top book on that pile Hounded by Kevin Hearne was recommended by one of my friends here for the visit. She knew I would like it and she was so right! I'm already reading the second one in the series and buying the rest! We decided to eat healthy for this adventure so I mostly cooked. We wolfed down nice cream and smoothies everyday as well as homemade soups, Buddha Bowls, vegan cookies and lattes. I didn't take many pictures because I was busy eating too, lol! We ate a LOT! I think we went through approx. 40 pounds of bananas in two weeks! It's hard to tell because I had a lot of produce before we began this adventure, lol. Everyone seems to be happy eating plant based vegan and no one went hungry. The downside though, one person caught a cold and before you knew it we all had it. I finished off the month in bed, but at least I had a lot of new books to read. I'm excited to see what February brings.
See you at the airport~ Hello, How are things? It's one crazy day after another here. I am thankful, as always to have so many good friends here in Texas, but boy they are keeping me uber busy! Unfortunately, I have had to turn down most invitations to dinners parties, girl's movie night and road trips the last few months because of work and the fact that I really don't even have time to sleep, much less do anymore than I'm doing now. (Ms. One World is really no fun at all boys and girls, sigh.) But the last few weekends I have been just giving up on the idea of sleep and going out on adventures anyway. And honestly I am so GLAD! We have had so much fun. It's great to see my old friends and laugh again! So between sneaking off for dinner or a couple of parties, I've been trying to pack up for a long weekend away. The weather is really unpredictable right now. All over the US...from heavy rains, storm and snow to droughts. So what to bring? And now that I seem to becoming a 80/20 Raw #Vegan there is that whole other problem of how much food/(not) cooking equipment to bring with me. I wonder how other Vegan/Raw people do it? As soon as I get it down I will do a packing list post, I promise. I find the smaller blenders actually fail...my small food processor does fine though. So which to bring and how much coconut oil, cacao and nuts to pack? You cannot count on finding these items at just any market. And making raw ahead is okay, but with no preservatives you have to be aware of shelf life. Speaking of, did I tell you I tried out a recipes for raw peanut butter cups? I think I should have smoothed the PB down more or added more chocolate (cacao) to cover the lump of organic peanut butter, but this was the first run. It was an experiment for a vegetarian friend who I think will love them. I'm pretty sure I can tweak the recipe to make them vegan. (#Goals) My taste testers graded them 5 out 5 on the "please give me more" scale. So I was more than pleased with the results. It still amazes me how easy it is to make raw and healthy foods. Who knew?
Next Step: Figure out how to transport them safely on the trip. Meaning more stuff to pack and explain to the TSA about. See you at the airport~ I hosted another Girls Movie Night this week. You can click on the link if you want to read about other such adventures we've had. Its usually a group of girls who bring too much food, have too much fun and watch a dvd or two. This week I hosted the blessed event. * _____ * Because of that they all brought healthy food. I forgot (as always) to take a before picture when all the goodies were untouched and lovely. This is the after shot, sorry. Thats not cheetos, lol that carrots! We mowed through carrots, mushrooms, watermelon, hummus, guacamole, organic chips, crackers, grapes, pineapple, a fruit tray, strawberries and these odd looking golden raspberries. Aud bought them and I was brave enough to try. They tasted just like normal red ones, but they were more expensive. I thew all the left over fruit (and there wasn't all that much) in to the blender the next morning with homemade almond milk and made this delicious smoothy! It was so good. Esp. since the weather has been so hot and humid, even early in the morning. #Summer All I've wanted to do is lay on the couch and soak up the a/c. #Truth At least now when I do I can enjoy my roses, :D Here is the update on how they look a few days later. Now I must run, really I mean go for a run. After all that food I MUST RUN, lol
Catch you later- Today we forgo Girl's Movie Night in favor of a picnic and some shopping. The ladies and I decided last week we needed to take advantage of this wonderful weather and have another picnic. #ExcuseToEat Angelica drove in with her dog, who didn't fall in the water THIS time. *Read about his misadventures HERE. Also Aud, Cher and Helen joined us. They had all just returned from the Ren Fair in Bastrop on Sunday and were all sunburned. #TomatoFaces I didn't go on that adventure because I was working. :( Everyone reported they had a good time and are planning on attending the next one. I added the link encase you want to check it out. I will not be in Texas for the Celtic fest, I plan on being among the actual celts during that time, lol. That morning it looked like more rain but we didn't let that stop us. After we met up, Aud was late (she over slept) and got ourselves sorted, we headed out for some over do r and r. We had no cell service there at ALL. After 4 hours of eating and laughing we left. As soon as my cell popped back on I was getting texts and calls from office. They went on shopping while I went to the office. #FML Catch you later- Hey! How are things? Hope your having a lovely week so far. I hosted Girl's movie night last night. Guess what we watched? LOL Yes, everyone had seen it and Yes, we watched it again and then spent the rest of the night (morning) laughing, eating & catching up. I think the last one left at around 2:30 this morning. #GoodTimes I ordered a sandwich tray again and forgot to take any pictures WTF? So at one point I snapped and then snapped these mostly crappy shots of the food table. Sorry. :( But you get the idea. We partied hard, lol. Beth made black rice (super Yums!) Aud brought cheese, cream cheese, crackers, Vanessa brought all the fruit and sauce. I ordered the sandwiches, and the other girls brought BR's, candy, assorted chips (Which we didn't even open!) and nuts. We are all trying to stick to "it" and eat healthy. Everyone had a really good time. I just saw them like 3 days ago (we had an event we all attended) so I wondered if they all would show up. One of the new ladies couldn't make it due to the weather, but all the rest came, lol. I think making time for these silly little get togethers is what makes life fun. BIG events are nice and all, but its the little day-to-day times that make your life richer. Plus its nice to get out, be social and just laugh together. :D Catch you later- How are things? I hosted another round of "girl's movie night" extravaganza. All the usual suspects were there and it was a interesting night. Somehow, I took even less photos than usual. (How is that even possible, right?) There was a strange bit of "disconnect" with the girls this time. Everyone is so busy right now, that I think we all really NEEDED the down time to just slack off and laugh. With work, family and all the pressure in between it's hard to fit in time to just slack off like we used to. (Well I do my best, wtf.) #KeepingItReal We did manage to watch a few movies this time! :D Mostly they were all "oldies, but goodies" most of us had seen, but not the whole thing in 1 sitting. We all turned off our phones and just vegged till around 3:30 a.m.! Well I did, trust me. This time they brought ME honey. Look 3 POUNDS of honey! :D And please to enjoy my current K-cup collection in the background. I think it drives Vanessa ape shit that the K-cups are not turned all the right way and in perfect order. #ThatsWhyIDoIt It was like Spring yesterday and now its cold again. :( #Confused and tired. Don't judge me, I look good for 108. Right? AND Before I go... Have you planned your Valentines fun yet?? Catch you later- Hey, Hope your week is going well. I hosted "Girls Movie Night" last night and am moving rather slow today. This time we did actually turn on the TV! #Progress! No movies, but we did watch the BBC Sherlock season 3. It was awesome! One of the other girls hosts a Thursday Night Horror movie marathon, (this is what my friends are really like, lol) and we were discussing next movie night we will marathon True Blood season 1 and see how that works. She has some teens at her extravaganza and doesn't get to watch a lot of the more "adult" (read sexy/nude) horror stuff. Not that True Blood is all that scary, but it is a wonderful slice of small town southern life- with Vampires thrown in for good measure. #InMyOpinion Anyway, back to last night... As you may know from all my whining lately I have been working non stop. I did plan on cooking a lovely buffet dinner, complete with gourmet touches for the ladies. In my mind I envisioned a pretty themed table, fancy garnishes, fresh fruit in some crafted watermelon bowl and other homemade wonders. :o #Perfection for my best buds.. Then, as is often the case, reality sat in and I knew I was screwed. I didn't have time to go to the market & since Rick had just blown in & then zipped out, THERE WAS NO FOOD IN THE HOUSE! :O So what does a smart, career woman do? She has the bloody thing catered! Oo la lal #FancySmancy MM, NO. I went with a sensible sandwich tray from Schlotzskys. One lady brought cupcakes (from Sam's) and another brought cake. So we had plenty of food! They were all happy to eat sandwiches and even looked at one of my work projects. (In my attempt to explain why I have been MIA & so lame lately. #FML) We watched Sherlock and visited and ate some more and laughed and ate some more. lol Sandwich tray (plus bottle of hot sauce, lol) to feed 5 was $26. + tax approx $30.USD. So it was a great price and for good, fresh sandwiches. (Not to mention more healthy than Pizza.)
#ImSoSmart :D They didn't leave until 4:00 a.m. (OH MY GOD!) so I guess they had fun? I'm headed home now for a nap. Catch you later- How are things? Sept, Oct. , 4 LB CAKE, June *Warning* They are full of nonsense & mayhem * ___ * Really (I think i'm gonna start a tag for all this craziness and before I leave for europe take picture of all the girls so you can figure out who is who! I will be across the Atlantic, so catch me if you can bitches! hahahah! ) OMG did I just type that? Diabolical plans should not be put in writing! :o Before I sat up for the ladies I went for supplies. Can't watch movies with out food, right? Then I promptly got all caught up in buying coffee for the Keurig. #CoffeeAddict WTF?! Must support and buy! I held back, really. Because, well, I just ordered some on line earlier THAT DAY. #SupportTheEconomy Stop judging and look at the weird American weather. The weather was really weird while I was out shopping. It was like twilight all day with Fog/Rain/Clouds?? Not super cold but just odd. WTF?!? How much longer is it gonna be cold?? Since everyone is on a diet or just watching what they are eating we went heavy on the fruits and veggies. Plain and simple food. But really good. We had a really nice time visiting and catching up session. CH and her hubby had a anniversary/date since I had last seen them. They went to the River Walk and spent a night in a swanky hotel, ooo la la!! (The Menger Hotel in San Antonio, Texas. I linked it if you wanna check it out.) She said it was lovely but people were so LOUD! The couple in the next room were arguing and they heard every word. Pay $$$ for nice room, add some insulation please. :( Happy Anniversary. #Fail But other than THAT it was a nice trip. They strolled on the romantic Riverwalk and ate at nice restaurants. Spent time together and relaxed. :) Then the girls wanted to hear all about the recent New Orleans adventures and several stories later...It was 3:30 a.m. and no movies/DVD/BR were watched! Another #fail But we had a really good time. :D My excuse for not taking any photos this time... I've gotta get back to work :( Phone won't stop ringing. Catch you later- Hey, How goes it? It was a little cooler this a.m. when I was walking. (The above picture). But it felt really good to just be outside. Yeah Fall! I just love it! :D I forgot to post the pictures from this weeks Girls Movie Night. It was last Monday, but I did even worse than normal with remembering to take photos. :( #FAil But I do have an excuse...I thought 2 of the ladies were going to *throw down right in front of the food table. (*Thats Texas slang for fight.) IDK this is really starting to get outta hand and more and more people are coming over to watch movies and visit. WTF?? I don't know why people can't get along?? Below is one of the few pictures I took of the food table. It was quite early on before people arrived and it OVER FLOWED with healthy food. It was THAT lady (read about another girls movie night) who once agin brought a cake. It was her and another lady that I thought were going to fight. (And not over that dumb ass cake.) I ended up being rude to both of them before it was over & you know how BAD I hate that. But we really don't need that shit. Be nice & get along or stay at home. It is my house after all... Anyway, I did remember to pass out the honey I bought the day before at the Farmer's Market. Everyone seemed to like it. After everyone arrived things settled down and we had a really nice time. It was around 3:30 am before the ladies left, so I was very tired Tuesday. Meaning I have no pictures of anything, sorry. #FML
