Can you believe it's already Thursday? This week seems to have just flown by! Today's my birthday so it's going to be a busy one. I had company this week and we stayed up late watching the annual meteor shower, eating and laughing! I haven't posted much this month because well, we were too busy enjoying life. Here are a few highlights of Augusts adventures (so far) and some of my birthday goodies:

I hope you are well and your week is off to a good start. I'm so late in posting today...Monday mornings are always busy for me because I have all the normal reports to run, plus certain other tasks that have to be done, even if we are traveling. By the time all that stuff is done it's time for online meetings with staff. Sooo long story, short- we had a very late start today, but we did a bit of exploring. In our quest to read the historical markers and learn more about the area we stopped at this little park. It is a very cute, and well maintained just outside of Roswell.
We were going to the International UFO Museum And Research Center downtown today, but were told that it was closed due to the pandemic. (If you are planning a visit call EVERYTHING first, there seems to be no rhythm or reason as to what is open or closed.)
This museum is focused on the 1947 Roswell Crash and later UFO incidents from all over the world. It was founded in 1991 as a nonprofit educational organization and is located in a former movie theater from the 1930s. The museum is said to contain an extensive library and exhibits focused on the history of UFO encounters. The Museum was opened in September 1991 and for some reason I always seem to skip going to this one... It also has a gift store with UFO-inspired souvenirs. Maybe #NextTime
And finished the night off with a gluten free, cheese free, loaded veggie pizza. I haven't had pizza (of any kind) this year! So this was a special treat. It was AMAZINGLY good!

Super glad it's Saturday and the weather is gorgeous. I'm up early because we are doing a bit of traveling this weekend. June is the perfect time to get out and explore, especially since some of the restrictions have lifted. We are still being safe, wearing masks and washing hands frequently, plus avoiding crowds, but also going a bit stir crazy from staying in so long.
We have some light hiking, (weather permitting) and of course a bit of shopping planned for today. This is the perfect time to go for walks and hikes before the weather turns off too hot. You never know what you will see in the high desert or plains area of the United States. It's not always what people expect.
But regardless of what you expect, it's always a good idea to explore for yourself.
Yesterday was a fun road trip day... here are some random pictures. More once we get settled into our holiday house.

I'm behind schedule today, so let's jump right in. I know what some other vegans are eating during the quarantine and it ranges from junk/comfort food to obsessive immunity builders, with lots of detox/cleanses thrown in for good measure. We went more "middle of the road" at my house. There is some vegan "junk" but also lots of greens and veggies. We really didn't change the way we ate all that much, expect for trying new things when the store was running low on food. Here is this weeks produce/food haul:

I haven't been posting many food pictures lately because we are eating the same old thing. I do make a desert about every other day though instead of weekly like normal.

Do you miss traveling? I do!
When you get stuck at home, you start appreciating everything that you can’t have. I am dreaming of being able to get out and explore the outdoors again; it’s spring after all!
These are difficult times for a lot of people, but try to make the best out of the situation you are in. Enjoy the peace and the quiet; breathe, slow down, and reflect. Read those books you added to your stack, and take it slow. We don't have to be productive every moment.
Have a snack and read... and know that soon we will be back out having adventures...
I miss the Netherlands...
My new (improved) bucket list is now about visiting more small towns in this region and exploring more vibrant cities. While we can't travel right now, we can still dream and plan.
While I think Amsterdam is a "must see" there is so much more to this region. What do you think? And what have you added to your bucket list?
