Happy August! It's that time again - time for a raw month to cleanse and detox! Are you ready? To be honest I try to eat at least 5-7 raw meals a week, so this isn't that big of challenge, it is much more challenging to give up the coffee! It is now Day 5 and I feel soooooo good! Don't get me wrong, I don't think Morning Star foods are bad for you - especially compared to the "real" burgers out there. But you don't want to live off them either. It's a good idea to give your body a break from everything, once in a while. If you are unsure as what to what to eat... I will attempt to post more of what I'm eating this month...
I'm taking a week off from work for my birthday, although the fun has already started, lol and so many good things are happening! Look for more blog posts soon! See you at the airport~ Okay this is mostly May - because it's still early June, lol. But I cook A LOT so there you go. (I really do, but I often forget to take pictures of the food or the process) #TrueStory So here are yet MORE random food and fun pictures. If you are new here, let me say I am not a foody nor do I take dramatic flat lay pictures...I do these posts because people seem to be curios as to what Vegan's really eat. Is it dust and cardboard? Hardly - I have also been making a lot of hummus at home lately. It's super quick and easy and tastes soooo much better when it's fresh. Catch you later-
This is another really random post of collected food from the last month or so. No real recipes, and no "plated" fancy food photos - just honest food my family mowed through, lol. Now that the Farmer's Markets are going strong and fresh produce is arriving daily, I'm cooking more. Fresh is always best and fortunately we have a good selection of veggies here in New Mexico. Are you ready to see what vegans actually eat? Last month was crazy at work! I have been so tired after all the meetings, that I just wanted to go home and go to bed. But, as I said I did make a resolution to cook more and eat less junk. Luckily I have a pantry full of fresh fruits and veggies and that makes it much easier. Also I have been shopping for healthy staples at Thrive and Whole Foods. Have you tried Ancient Grains? I seem to be eating a lot of Quinoa and ancient grains lately. They are much easier to digest and so much better for your overall health. I'm excited to try new veggie combos and different fruit mixtures. I have collected a few new recipes I want to try out. The more "fake baking" I do the more I love it! So expect more food picts on my feed..
I think the boxes are getting better and better! They are definitely worth the small price of $23.18USD #OMG! How do they deliver so much for so little?? Why haven't you ordered yours already? It's Vegan and you gotta admit it's nice getting snacks in the mail, lol.

I usually only take photos of my "Fake Baking" and chocolate concoctions, but I do cook (create) a lot of dishes. My food is pretty random and rarely beautiful to photograph. I also don't style it up, so if you are looking for styled photos of succulent berries or colourful smoothie bowls, sorry to disappoint! But people seem to like my cooking, they keep coming back for more and also asking for recipes. Lately I have been making Hummus, raw zucchini noodle dishes, nut burgers and of course, Vegan deserts. And of course I make "Vegan Reese's Peanut Butter Cups" every few days. Recently I have been experimenting with different hummus recipes. I have been purchasing the beans already cooked and adding fresh ingredients and varying the spices. There are so many good recipes online, with many delicious variations, I doubt I will buy prepared hummus ever again. My son is not a fan of tofu. I personally like it. I routinely prepare stir fried tofu and my son picks around it. I bake with tofu and he passes on desert that night...you get the idea. Not a fan. I was wondering what I could make for a hearty, but fast Saturday morning breakfast before we ran away on an adventure. Not eating eggs makes for a more limited breakfast menu. Don't get me wrong, I do not miss eating eggs at all, not one bit. But with Vegan pancake mix being so crazy expensive and few options left I was stumped for ideas. I turned to versatile and affordable tofu. But getting my son to eat tofu... And to be honest the smell of eggs cooking used to turn my stomach, so I rarely ate them years before becoming Vegan. But that said, one of the all time best breakfasts I have ever had was a 'Migas Plate' at a hole-in-the-wall joint, on the wrong side of I35 in Austin. I think it was as much about the company as the eggs, but DAMN that was an amazing breakfast. After much deliberation I recreated that breakfast using firm tofu. I chopped a bit of red pepper and onion and sautéed in a tiny bit of extra virgin olive oil. I then added the drained tofu, and proceeded to "scramble" it about. I used a wooded spoon to help break it up and added turmeric for the golden color. From there I added a few chopped grape tomatoes, pepper and organic corn chips. I mixed it all up to warm, and then added about a cup of chunky picante sauce. The sauce was extra spicy and chunky and I made sure to not over work it in the skillet. It was a HUGE success! It probably took all of 10 minutes, including chopping the pepper and onions. My son ate 2 plates! We have a winner and I have a new fast Saturday morning breakfast! #PatsOwnSelfOnBack We are also drinking Vega Protein Mix on busy mornings. Also what do you do when your chopping garlic and see a green sprout? Well, you can still use it, just cut the sprout out and be prepared for the garlic to be a bit bitter. Or you can plant it!
And Voila A new garlic plant in the making! 💖 I know I really didn't show that much food, lol. I shall strive to be more vigilant and take more pictures in the kitchen on the next Vegan Food Diary Post. See you at the airport! I'm sat here listening to the rain drumming my windows and I'm happy as a clam. I'm diligently working on another road trip post, well I'm still sorting the pictures actually. I have an idea of what I want to share, but first I really need to clear some random pictures, so that brings us to this random post. How was your March, by the way? It's been an odd month for me. I was swamped with work after being in Iceland and NYC, had out of state company, went on several amazing road trips, bought more stuff for the new house and tried to 'will' spring forward so I could work in the garden. I haven't posted all that much this month, with only 12 posts in 28 days, but I have been taking photos. So let's explore the pictures I've found but not posted.... I did not blog about this months Vegan Cuts box. Not that it wasn't great, because it was, but I was tooo busy. Here are the pictures I took before we mowed through all the Vegan snack goodness. I've also been experimenting with more new vegan cooking this month. Refining the 'go to' Hummus recipe, making the best Kale Chips and I of course made stir fry for company. They loved it and the organic Sushi Rice stole the meal. If you follow me on SC then you know I was caught in a detour due to production work last week. It wasn't that bad, actually I was just grumpy because I had been working too much. (And I wanted to pick up fresh peppers and spices for dinner. It's always about food, isn't it?) People here remind me of the people in France when it comes to TV/Movies and actors. They pretty much "don't care" so there isn't a big rush of people flocking to watch the filming, which is cool, because the devour was bad enough, lol. Its surprising how much is filmed here, I thought Austin (Texas) was busy, but it's noting compared to New Mexico. The weather has slowly gotten warmer so I took advantage of the sunshine to repot plants and added some flowers to the patio. Okay next post should be a road trip update or full post...also new cruise in the works and a trip to Colorado! I'm so excited!
See you at the airport~ Hi, How are You? It's been awhile since I reviewed a new product, so I was thinking, since I'm always hungry (true story) and always excited to try new things, I thought I should share my findings with you today. But first the Disclaimer - I'm not a food blogger. I'm a hungry vegan.... If you are expecting glorious food pictures, decorated with flowers and tiny bits of glitter, move on..you won't be happy here. I'm just a girl who likes to travel and eat. I bought this item and decided to cook today. Perhaps my experience will be different from yours, perhaps not. Okay, so who wants pancakes?? Here is what happened next: They were a HUGE Hit. I served them with Organic Maple Syrup and wow.
Just wow! I can also report that I had no heavy or bloated feeling afterward. Everyone ate their fill and we still had a few left and when asked, all voted this to the "buy again" list. #score Now remember, I didn't use eggs, I replaced them with the Neategg. I didn't use milk at all, it was replaced with water. The butter was replaced with olive oil and the pancakes were fried in coconut oil. So I barely followed the instructions at all, lol! Pros: Flavor was good, the mix was easy and everyone liked them. I think these would be great for a day when I have company and they want a more "traditional" breakfast than Vegan Nice Cream, which is my personal "breakfast of choice". This, plus veggie sausage, fruit and fried tofu would make a huge, traditional breakfast that would please anyone. I recommend this as a staple to keep on hand for guest or for when you want a breakfast change. Cons: I would not eat them often, as I do not consider them particularly healthy. Also even if I could get two or three meals out of a box.....that's a lot of money for pancakes. Have you tried them before? Or do you eat them regularly? I'd love to hear what you think. I will buy another box and keep in pantry for guests or that odd breakfast. I'm gonna try some of the other products this company makes and will report back on them. Catch you later I still have pancakes to eat~ Hello! As promised, I'm answering some of the questions I have been recently asked about Iceland. Everyone sees things differently, but I find that if you are positive and open to new experiences, the results will usually be positive as well. That said, I am by no means an expert, but this was what I have learned from my most recent trip. These are the questions I have been asked the most: "1. How are you standing the cold???" We are doing fine, thanks for asking. We took too many clothes, but what else is new? The key seems to be layering. Once you understand the simplicity of layers, it becomes easy to stay warm and move back and forth from walking around along the shore line, to sitting in a cafe, comfortably. Question 2: "How many hours did it take you to get there? Did you fly or cruise? " The trip started HERE if you want to see some of what I did along the way. I think it took 4+ hours to get to New York. There are 2 time changes along the way and I slept some of the way. The flight from NYC to Iceland was right at 6 hours. It is actually a shorter trip from NYC to Iceland than NYC to LAX. #WTF? Reykjavik is on London time, so yes I did have jet lag. But it was okay, because so much here happens at night. People are up and roaming around, going on northern light tours and eating. #GoodTimes Speaking of eating, Question #3: "What gross stuff do they eat that you wouldn't touch?" Answer: Are you kidding me? I'm a mostly raw Vegan. I wouldn't touch what MOST of the world eats. So thats a mute point, but what a funny question, huh? Here are my findings on food: Question #4: "Is the airport close to town? Which airport did you fly into?" Answer: No, it's not close to town, we flew into Keflavík International Airport. From there we took a FLYBUS straight to the hotel. Buy tickets on line or at the airport. It cost around $82USD for a round trip for two people. They are also Reykjavik Excursions and run most of the tours. I found the bus company to be safe, clean and the best bet from what I saw and heard from other people. We took a couple of tours with them. (See more of my Iceland posts) Mostly everyone with the company spoke English and was helpful. Headed to the hotel. And speaking of the buses - you might wanna note: I only heard of one bus that had a restroom/WC. So prepare for that. I hope that answered a few of your questions. I really, really am enjoying my time here! Next time I'm sure we will stay longer and rent a holiday house and perhaps a car. Unless you take a tour bus thats the only way to see some of the sites here. There is so much unspoiled beauty! But you have to get out of town to see it. So keep that in mind when planning your trip. Traffic wasn't horrible, but is somewhat congested in the cities.
Oh! Did I mention my American cell phone worked here? I was going to purchase a sims card, but when I saw that I had service - I did not bother. The rate was 20cents (American) a min. to talk, with free texts and free internet service. #WIN! I'm using the new Iphone and couldn't have been happier. Ok - I'm off to explore more.
