I'm not sure how it's even possible, but this blog is 10 years old today. WTF?? How is that even possible?? It seems like only last year I took the plunge and leaped out there and bought this domain. Looking back, I've blogged about my adventures traveling in the USA, Europe, Iceland, Canada, Mexico and South America. I've written about trips planned, delayed and failed, as well as amazing adventures that were life changing. I've shared my cruises to the Caribbean, Europe and the Transatlantic journeys. I documented my switch from Vegetarian to Vegan, shared recipes, created book reviews and wrote about my day to day life. I've moved from Texas to the south of France, London, the Lake District and back to the USA and you have been with me. This blog has opened so many doors for me. I have written several best selling books that wouldn't have happened if I wasn't pushing myself to write here. It's also helped me to try new things, and be open to new experiences. I've gotten serious about Youtube and started sharing way more of everyday life. My world has grown as I've meet new people from all walks of life and become much more of a global citizen. Thank you so much for reading my posts, sharing your own stories and connecting with me. Your feedback, suggestions and insights have helped me so much. Your friendships mean the world to me and I treasure you. In the next part of this 10 year celebration I'm going to share some stats with you and take a trip down memory lane. (Reading the old posts used to make me cringe now I am just nostalgic!)
I can't wait to see what the next 10 years bring! Happy Weekend! I hope your doing well and enjoying autumn? I'm traveling today. (Oh how good it feels to be able to write that again!) The weather turned off colder so I went south (again) this time to a new spot... If you missed it, I took a nice 10 day trip last month and uploaded several videos of our stay here and here plus lots of short! So if you don't follow my Youtube channel head over here. We stayed in a lovely holiday cottage and had a very nice time. I'm also working on uploading all the food /recipes from that stay --so stay tuned for those. I promise to write more once we are settled in.

This refreshing spritzer is just what you need on a scorching summer day! It’s bright fruity flavor pairs perfectly with the warm earthiness of the culinary herbs and freshly grated ginger for a truly interesting combination. One taste and this is sure to become a new favorite! Prep time: 15 minutes (+ time to chill) Cook time: n/a Serves: 4 Ingredients 2 T. real maple syrup 1 c. water 1/3 c. fresh lemon juice 2 T. fresh mint, washed and torn into pieces 2 T. fresh basil, washed and torn into pieces 2 t. fresh lemon zest, preferably organic 2 thyme sprigs 2 t. ginger, finely minced 1 large lemon, thinly sliced 2 c. sparkling water Optional Adults-Only Version: 4 oz. vodka Directions:

Frozen Mango Slushy This delicious, refreshing frozen slushy does not require any added sweetener thanks to a healthy dose of fresh (or frozen) mango and orange juice. A small amount of fresh lime juice adds just the right amount of tanginess to balance out the sweeter flavors. Prep time: 10 minutes. Cook time: n/a Serves: 4 Ingredients: 2 ripe mangoes, peeled and cubed (or 2½ c. frozen mango) ¼ c. fresh lime juice ¾ c. fresh orange juice ½ c. water 8-10 large ice cubes Optional Garnish: 4 short fresh rosemary spears, bottom leaves removed 12 small fresh mango chunks Directions:
Hiya! Hope you are well, warm and enjoying yourself. It finally decided to become winter here. So I've had spotty net and lots of cozy evening by the fire. I really enjoy the cold, especially if I don't have to go anywhere, lol. We had company last month and I cooked liked a mad woman, I have started a 'Veganary Food" post which should be up by late July, LOL! No, really I have a few new recipes I want to share with you and cooking tips, but work has been so busy. Which, I am thankful for. But its keeping me very busy and then when I'm done I really don't feel like blowing. (Or doing much of anything.) But with the travel restrictions easing up, it looks like we will be traveling again soon and I am so excited! But in the meantime I'm going to enjoy winter here with my warm socks and hot tea. But really, Brrr ❄️ ☕️ 📚 We have another snow storm expected next week. So Spring will be late this year. I have the urge to go purchase 9,000 + plants but am holding off till I know my schedule. I hate the idea of purchasing a horde of plants and then leaving for a month. Speak soon!
Hello and Welcome to February! Hopefully you are having a great 2022, and are finding time to relax and enjoy the weather. I had company last month, worked a bunch and ate a lot of good food. When I have company I try to prepare "normal" vegan food. Meaning things that meat eaters can understand. Although most want to try new recipes I feel like we need to ease them into a meat-free experience. So I make dishes like this: Chickpea pasta is so good for you, plus super easy to cook. I also made hummus daily, along with oatmeal breakfast cookies, smoothies and other yummy non-vegan favorites. There are times when I really enjoy cooking and other times when it seems more like a bother..January it really was a nice break from non-stop work so it was a joy to share these simples dishes with my friends. Everyone enjoyed non-cheese dishes as much as ever- with pesto pizza being a new favorite. I add mushroom gravy to Gardien (non) beef tips and served with rice and stir fried peppers, carrots and onions. I swear they licked the plate clean! LOL Recipe here I hope you were able to enjoy good yourself last month. Good food and friends make for a perfect way to begin the year!
Speak soon~ As we continue to celebrate 2022, I'm cooking up a storm! I had non-vegan friends from out of state come for a visit last week. I wanted to cook dishes that would be both hearty and comforting for them and wanted to share some of my findings with you. I bought Garden beefles tips and went to their website for ideas on how to make these work. What is pictured about is my version of a recipe found on their website. I used what I had on hand and jump it. IT WAS A HUGE HIT! I only have the quick photo because it was eaten almost before I could say "Vegan!" lol INGREDIENTS

This is based on a recipe I found on the Gardien website. I made minor changes, using what I had on hand. It was a big hit with my family and also the non-vegan company. I highly recommend this simple recipe. |
