It's almost my birthday. (13 Aug) But the fun and surprises have already started! :D I'm taking off a FULL WEEK of work beginning in a few hours! Can you tell I'm super excited? I have actually been receiving birthday gifts all month long. #superspoilt
I'm so blessed to have so many wonderful friends and be surrounded by people that care about me! There are a few adventures planned this weekend and I'm going to attempt to load some of the old blog posts I have never finished too. So maybe I can sorta get caught up over the next few weeks. But in the meantime let's party! See you at the airport! This is another really random post of collected food from the last month or so. No real recipes, and no "plated" fancy food photos - just honest food my family mowed through, lol. Now that the Farmer's Markets are going strong and fresh produce is arriving daily, I'm cooking more. Fresh is always best and fortunately we have a good selection of veggies here in New Mexico. Are you ready to see what vegans actually eat? Last month was crazy at work! I have been so tired after all the meetings, that I just wanted to go home and go to bed. But, as I said I did make a resolution to cook more and eat less junk. Luckily I have a pantry full of fresh fruits and veggies and that makes it much easier. Also I have been shopping for healthy staples at Thrive and Whole Foods. Have you tried Ancient Grains? I seem to be eating a lot of Quinoa and ancient grains lately. They are much easier to digest and so much better for your overall health. I'm excited to try new veggie combos and different fruit mixtures. I have collected a few new recipes I want to try out. The more "fake baking" I do the more I love it! So expect more food picts on my feed..

Hello! As promised, I'm answering some of the questions I have been recently asked about Iceland. Everyone sees things differently, but I find that if you are positive and open to new experiences, the results will usually be positive as well. That said, I am by no means an expert, but this was what I have learned from my most recent trip. These are the questions I have been asked the most: "1. How are you standing the cold???" We are doing fine, thanks for asking. We took too many clothes, but what else is new? The key seems to be layering. Once you understand the simplicity of layers, it becomes easy to stay warm and move back and forth from walking around along the shore line, to sitting in a cafe, comfortably. Question 2: "How many hours did it take you to get there? Did you fly or cruise? " The trip started HERE if you want to see some of what I did along the way. I think it took 4+ hours to get to New York. There are 2 time changes along the way and I slept some of the way. The flight from NYC to Iceland was right at 6 hours. It is actually a shorter trip from NYC to Iceland than NYC to LAX. #WTF? Reykjavik is on London time, so yes I did have jet lag. But it was okay, because so much here happens at night. People are up and roaming around, going on northern light tours and eating. #GoodTimes Speaking of eating, Question #3: "What gross stuff do they eat that you wouldn't touch?" Answer: Are you kidding me? I'm a mostly raw Vegan. I wouldn't touch what MOST of the world eats. So thats a mute point, but what a funny question, huh? Here are my findings on food: Question #4: "Is the airport close to town? Which airport did you fly into?" Answer: No, it's not close to town, we flew into Keflavík International Airport. From there we took a FLYBUS straight to the hotel. Buy tickets on line or at the airport. It cost around $82USD for a round trip for two people. They are also Reykjavik Excursions and run most of the tours. I found the bus company to be safe, clean and the best bet from what I saw and heard from other people. We took a couple of tours with them. (See more of my Iceland posts) Mostly everyone with the company spoke English and was helpful. Headed to the hotel. And speaking of the buses - you might wanna note: I only heard of one bus that had a restroom/WC. So prepare for that. I hope that answered a few of your questions. I really, really am enjoying my time here! Next time I'm sure we will stay longer and rent a holiday house and perhaps a car. Unless you take a tour bus thats the only way to see some of the sites here. There is so much unspoiled beauty! But you have to get out of town to see it. So keep that in mind when planning your trip. Traffic wasn't horrible, but is somewhat congested in the cities.
Oh! Did I mention my American cell phone worked here? I was going to purchase a sims card, but when I saw that I had service - I did not bother. The rate was 20cents (American) a min. to talk, with free texts and free internet service. #WIN! I'm using the new Iphone and couldn't have been happier. Ok - I'm off to explore more. Catch you later- And just in time the December Vegan Cuts Snack box has arrived! Who needs sugary, artificial crap when we can snack on organic, healthy treats like these! I am always surpised - there are so many healthy products I never knew existed! These healthy, authenic foods make you happy as you snack on them! Now that the day is over I'm going for a real run and then back home to watch the rest of Timless and snack - See you on the coach, lol
Happy December! It's that time again. You know, time to remember I have a blog, lol and sort through all the random pictures on my iphone in hopes of a story or two. Most of the stories I can't share just yet...but soon. (Wink) Regardless, I hope you had a nice November. I sure did, thats why I haven't been posting much. So much is going on and I've been uber busy with work, the new house and shopping, of course. It would not be November/December without the all shopping! Mostly I am shopping for myself again. #Fail :( My Christmas shopping isn't done, but I'm close. So as a reward for all the hard work I've been chruning out (non blog related) I could not resist a new pair of shades. Oh! And of course the annual Sephora holiday sale started so I HAD TO GRAB something there, lol Luckly both of these parcels arrived today or I would be showing you more Vegan food and sunset pictures, lol. I think this is where I say "I will blog more this month"...you know, like I say every month? lol But I might actually do it this time. I plan on taking sometime off for the holiday and my next out of country trip isn't till Jan. Oh wait, thats next month????
I better start packing--#FML See you at the airport! Hurray! It's that time again! The monthly Vegan Cuts Snack Box has arrived! This month's box was full of delicious and healthy goodies! I confess we gobbled up the goodies before you could say Trick or Treat...lol #TrueStory Pardon my tired face, I have been working non stop lately. It will all be worth it shortly...Yes I have big travel plans in the works! And I'm so excited, well disregard the picture...I really am excited, lol.
See you at the airport! Hello there, Is it Halloween in your world yet? The fun is in full swing here. I so love this time of the year. The weather is nice and people are planning parties and having lots of fun. But Warning: I feel the travel bug about to take hold again. #Wanderlust is running through my veins again... I haven't been able to do much, lately due to all the rain. But in the meantime, I have finally finished my LARGE project at work, so I shall be posting more, traveling more and generally having adventures again! I hope your ready...cause I sure am! Spooky produce... Yes, direct from the field to the market..no need to carve or decorate! I have more Halloween Hijinks to post...so do come back. After a good nights sleep I'm gonna be ready to party again!
Catch you later~ We returned home in between adventures to find the June Vegancuts box had arrived. I was emailed tracking, but couldn't be bothered to check it. When you chasing sunsets and traveling on "The Journey of the Deadman" (more about that in the next post) you don't have time to track your mail. We signed up to the monthly vegan snack box a few years ago, but between traveling, moving and generally never being home we ended the subscription. I must say the boxes are BETTER than I remember them to be. So glad I restarted the subscription. This is the vegan goodness we found in our June box: I ate the popcorn first thing (my son doesn't like popcorn of any kind). I was not thrilled with the seasonings, I'm not a fan of curry, so it's not my thing. But it was a full size bag and was very fresh. If you like Curry I'm sure you would enjoy it. He happily ate the rest of the contents over the course of a few days. He liked everything included in the snack box. I think it was well worth the price and nice way to sample products you maybe never heard of. It is also nice to try all the products knowing they are vegan and healthy. I would recommend Vegancuts monthly subscription snack boxes. So give them a try if you aren't already on the list. Now I must go, this vegan nice cream is calling my name...
See you at the airport! How are things with you? This has been an outrageously busy week for me. Between work (didn't I say I was taking off the month of May to move? WTF?) Packing up to move, friends in crisis, crazy flooding weather conditions and company, things have been insane. But on the bright side... I received both a Thrive order and the May Vegancuts snack box this week. At least we have plenty to eat, if I could only slow down long enough to sample them. The selection was good and the prices were not too bad. Thrive is a yearly subscription company that offers wholesale prices on organic, healthy food and household items. They also give back to the community. I didn't feel the prices were actual wholesale though, or if so only a few pennies cheaper than other online stores. Some of the items were comparable to my local market in prices. Still overall I was pleased with the order. The free shipping took a full week to arrive. (Amazon Prime has me totally spoiled.) But the box was well packed, the order was complete and the items were fresh. I'm signed up for a year, so I will place another order next month and decide if I want to keep it or not. Now on to the May Vegancuts snack box: I have not ordered Vegan cuts in over a year because we were living out of the US. It seems like there is a lot MORE food than I remember in this box.
