Ready, Set, Jet!

Okay this is mostly May - because it's still early June, lol. But I cook A LOT so there you go. (I really do, but I often forget to take pictures of the food or the process) #TrueStory So here are yet MORE random food and fun pictures. If you are new here, let me say I am not a foody nor do I take dramatic flat lay pictures...I do these posts because people seem to be curios as to what Vegan's really eat. Is it dust and cardboard? Hardly - I have also been making a lot of hummus at home lately. It's super quick and easy and tastes soooo much better when it's fresh. Catch you later-
As I look back on this year, with the 4th of July just around the corner, I confess that 2017 has been a mild, mellow ride; I’ve celebrated wonderfully unforgettable moments but have also traveled far less than I normally do. This is a travel year for so many people, but for my family, it has been a year of healing and feathering the nest. Life has a funny way of doling out surprises — one day is never like another. Some days I feel as though I’m resting atop a beautiful mountain and others I am sitting at its bottom, the only view uphill. Work has been changing for me, evolving and growing, which is great, but it is taking more and more of my time. Don't misunderstand, I’m grateful and truly blessed. My family is healthy, happy and I’m doing what I love, but travel is taking a back seat. I’ve cancelled or postponed more trips than I have completed this year. But I did manage to go to Iceland and visit a couple of favorite spots so far. To read more about Iceland click here and here or hit the tag. Since I haven't left New Mexico much this year, most of my time has been spent learning more about the area via short day trips and weekend road trips. There are many cool parks, nature areas and events close by. I almost forgot... I did manage to squeeze some time out for fun in New York. Read about some of those adventures here.
I think next year will see us traveling much more and I know 2019 we will be leaving for Asia and MAJOR adventures there. #Excited So this time in New Mexico is much needed as we plan the trip and work out the details. I cannot wait to see what the next 6 months bring! See you at the airport~ I'm often asked how I find the best deals or the right transportation for those big, massive trips.
It's all in the planning. Don't get me wrong I love an impromptu road trip as much as anyone, but being stuck in an unfamiliar country, in a tiny train station in the middle of the night with no phone service, no taxis and a small child isn't all that much fun, especially after a 11 hour flight. #TrueStory #LessonLearned When I'm going to be staying for an extended amount of time (read months) in a foreign country I always do as much research as possible and plan ahead, booking as much as practical in advance. But even if you are just taking a week long holiday, it's wise to understand the culture and customs of the area you will be visiting. (And the Uber limits/cost of late night taxis.) Also pre-booking usually cuts cost somewhat, leaving you with more money for shopping and dinning. #WinWin Most people tell me that they would love to travel more, but seem at a loss as where to begin. What about you? Are you overwhelmed by it all? Start with these simple steps and enjoy the process.
Now get planning! There is a whole, wide world out there just waiting to be explored! See you at the airport~ OMG! I found another old, forgotten half finished post! Did I EVER finish a post or what? WTF?!? This one is from a road trip I took last May (2016) - I drove from south Texas to Albuquerque, New Mexico. I believe this trip was to look at houses. Which actually I didn't do. I knew what I wanted, researched the area and made an apointment to look at one house... And it was of course perfect! And then, finally we were in New Mexico. And all the Alien Craziness that is Roswell. Don't get me wrong, I love it or I would not stop there so often, lol. So we spent the morning roaming around Roswell taking pictures and buying Alien T-shirts, lol. Roswell ~ is a quirky town, but well worth a visit if you are in the area. Err, actually this was my 3rd visit in 2016. The Roswell Daily Record (From Wiki) This is what started all the UFO craze for this sleepy little town.
After spending a day taking silly alien photos, I got serious and drove on into ABQ. The weather was amazing and it was a perfect day for a road trip. Seems like May was over in a flash! Was it like that for you too? I didn't really blog that much in May. Work + Life = Me mostly not having it to give. #TrueStory But I did make an attempt, at least and you came back and read it again and again. I know because my numbers went up! Lol Below are the top, most clicked on posts for the month - if you missed any of them. *Warning* food heavy posts ahead, lol 1. What Are you Reading? (March Edition) - Hmm, Well I'm not sure I blogged any of what I was reading in April or May. Top 25 Travel Quotes This is from the Blog home page....Some of my favorite quotes about travel. 9. Vegan Beauty Box May 2nd post and also from the home page. This was a Vegancuts Beauty Box I ordered. 9 pictures and extra points because I set the box (and some of the products) on a few of the books I'm currently reading! See you at the airport! |
