I must say that through meditation and ridding my life of "High Drama" & so called friends my life is pretty calm. :) It’s taken a LOT to get here. I used to be shoulder deep in drama. Mostly mine, but my friends and families or even strangers, too. It didn't matter. I thought it was normal, I thought I was being a good friend and I was helping. :( After my husbands sudden death my world flipped over on itself. I went through some really, really trying times. I had major support from a few good friends and some how made it through the worst of it. As I examined my world and what I thought I wanted in life I knew I had to make some changes. Scary changes. :0 Like facing my life... Being honest with yourself is really difficult. We find ways to not spend time alone, not think or not care. We eat, drink, over spend, take drugs & have meaningless relationships just to not examine our lives. Why? What are we afraid of? I used to meditate, but gave it up as life got more and more demanding (which is the time you need to meditate the most, actually). I tried to do what was expected of me and what I thought worked for other people. But in reality is any of that (over spending, partying too much, etc -see list above) really working for anyone? Is anyone you know really, I mean really happy? Be honest, are you? (insert ad for cult here) No, just joking. I don't have any answers. The world is a fucked up place. But I can say that I cope better with meditation. I also know it helps my friends, co-workers and people I know/ hang out with. They still cuss, shop and work. But they are more "themselves" than robotic. (if that makes any sense.) And they are happier than before, because they understand that how you perceive the world creates it. (Like being pissed all the time, just makes you pissed off even more. Fun, huh?) Meditation has a ton of benefits. (Google it if you don't believe me.~) but I do it for the way it makes me feel. Mind, body & soul. If you want to feel better and are ready to start working through your crap then start there. Just sit and be. “If you want to conquer the anxiety of life, live in the moment, live in the breath.” “The mind can go in a thousand directions, but on this beautiful path, I walk in peace. With each step, the wind blows. With each step, a flower blooms.” ― Thich Nhat Hanh Who doesn't want peace? Take the time and make the changes your heart is telling you to make. Do it now. Well I have been so busy I forgot to post a picture of these. I was surprised with these, cute huh? Bigger than I usually wear, but I like them. +Gifts are always nice! :D And while I was out shopping & saving the economy (your welcome.) I discovered this in the local market. (pictures below) Didn't think they knew what gluten free was in small TX town? In speaking with some of my friends they are also considering going gulten free, even though they do not have a food allergy. More as a step for better health. I think next week when work slows down I shall return to store, purchase a variety and bake! Review to follow, maybe. As time permits. I want to try them all, but I was in a hurry. And look what was also right there? Because it's healthy? LOL NOT. How funny. And because my EU friends don't believe me about the Super Markets in Texas... This is a smallish supermarket. They also sell lots of other stuff. Ok, if you MUST have those planters the store is HEB, just google them. They ship. Now I have a late lunch meeting and then a date tonight. I'm working Saturday and Sunday is the party @ the B & B. Then it will be July! OMG! Where did the time go?
Catch you later- Hey, At almost 7:00 pm and it was still 100'F (or 37.8 C) Which is F'ing Hot. It's going to be 103' Saturday...so thats it now till late September/Mid October. Life is mostly over here. We will all just stay inside as much as possible and whine about the heat. (Fun, no?) Key tip to survive here: One MUST adopt the Vampire lifestyle...only leave the house when sun goes down, stay inside and cover up so not to burst into flames..wear thick shades, Sunscreen 1000+, etc you get it. Some silly humans go tubbing down the river in the late afternoon, they invited me....I am still laughing so hard. Hahahah AS IF.... :0 I made a Sonic run for the office, cause i am kind and caring Boss Lady.. Mostly we just pour Cold Tea over ourselves... I like Slushes, myself. The icy cold goodness hits the spot as it flows through your veins.. Client just called me (approx. 8:45 pm) "Is it too late to come by?" Also a Vampire..."No, perfect," I say, "You headed to Sonic?" LOL So I'm going to end this pointless post here. She will be here any second and I really need to brush my fangs, er teeth..cause of the pineapple. :(
Catch you Later- Hey, Did you remember that today (Wednesday) is the best time to BOOK & also to fly in the US? I was able to snag a good deal for a friend going form Austin, TX to Tulsa, OK for July/Aug travel, earlier today using Hotwire. So there is still time if you hurry... The US awaits, but you better hurry, because prices are going up & up. Plus It’s so HOT here in Texas I don’t advise a trip here until after Oct. (Really, I’m being serious.) If it weren’t for work I would already have left for the summer. As it is the heat is just snapping everyone’s energy and we are all stumbling around, sweating, complaining and generally not getting anything done. My friends are in San Antonio today touring the Alamo. Hopefully no one burst into flames. :X
I’m going to the pool. See ya later- Hey, So I was surfing around looking for some tea sandwich recipes for the upcoming Surprise Birthday Party Event. None of these are MINE all came from the many different sites I visited looking for info. I called the caterer again and decied that the best bet is to just LET them HANDLE IT. Several of the invited girls have asked me to make this or that.. but screw it. I don't even have time to make coffee most days. * ____ * Anyway, rather than let this info go to waste I decided to post here so WE (me and you) would have it later! Cheese and Cucumber Sandwiches 1 (8-oz.) package cream cheese, softened 1/2 cup peeled, seeded, and finely chopped cucumber 1/3 cup mayonnaise 1/4 cup minced red onion 3 tablespoons finely chopped fresh basil 1/2 teaspoon freshly ground pepper 1/4 teaspoon salt Preparation . Stir together softened cream cheese, cucumber, mayonnaise, red onion, basil, freshly ground pepper, and salt. . Spread on: white bread; sandwich with diced fresh strawberries. Cream Cheese Tea Sandwiches 16 oz cream cheese softened 2 tablespoons mayonnaise 4 oz can crushed pineapple with juice 1 cup pecans chopped and toasted 32 oz packages thinly sliced white sandwich bread (2 packages) Preparation . Combine cream cheese, mayonnaise, and pineapple. Stir well until thoroughly blended. Stir in pecans. Trim crusts from bread slices. Spread filling on 1 side of half of bread slices, top with remaining bread slices. cut each sandwich into 4 triangles. Chill until ready to serve. For testing purposes only, we used Pepperidge Farm Very thin white sandwich bread. I think From Southern Living. ________ Egg Salad Tea Sandwiches 8 hard-cooked eggs, peeled and grated 2/3 cup mayonnaise $ 1/2 cup finely diced celery 1/4 cup finely chopped chives 2 tablespoons minced red onion 1 tablespoon chopped fresh tarragon 1 teaspoon freshly ground pepper 1/2 teaspoon seasoned salt Preparation . Stir together grated eggs, mayonnaise, celery, chives, onion, tarragon, pepper, and seasoned salt. Spread on: whole grain bread slices. Spread mayonnaise on an equal number of whole grain bread slices. Sandwich egg salad slices and mayonnaise slices with fresh watercress. and Olive Tea Sandwiches 1 (7.5-ounce) jar pimiento-stuffed olives, drained and chopped 1/2 small onion, diced 2 hard-cooked eggs, chopped 1 cup toasted pecans, chopped 1 cup reduced-fat mayonnaise 36 thin white bread slices Preparation . Stir together first 5 ingredients. Cover and chill 1 hour. . Spread olive mixture on one side of 18 bread slices; top with remaining bread slices. Trim crusts from sandwiches; cut each into triangles, or cut with decorative cookie cutters. . Note: For testing purposes only, we used Pepperidge Farm Very Thin White Bread Slices. I picked this because there was a VERY healthy crop of tomatoes right now. But speaking of healthy, we all know canned soup is high in sodium. Tomato-Basil Bisque Canned tomato soup gets a boost in this satisfying version, served warm or cold Ingredients 2 (10 3/4-ounce) cans tomato soup, undiluted 1 (14 1/2-ounce) can diced tomatoes 2 1/2 cups buttermilk 2 tablespoons chopped fresh basil 1/4 teaspoon freshly ground pepper Toppings: fresh basil leaves, freshly ground pepper, Parmesan cheese Preparation . Cook first 5 ingredients in a 3-quart saucepan over medium heat, stirring often, 6 to 8 minutes or until thoroughly heated. Serve immediately with desired toppings. I think this was from Southern Living too. (To go with the Tomato Bisque) Neiman Marcus Cheddar Cheese Biscuits Ingredients 2 1/2 cups all-purpose flour 1 1/2 tablespoons baking powder 1 teaspoon salt 1 cup vegetable shortening 1 cup (4 oz.) freshly shredded sharp Cheddar cheese 1 cup buttermilk Parchment paper Preparation . 1. Whisk together first 3 ingredients in a large bowl. Cut in shortening with a pastry blender until mixture resembles small peas and dough is crumbly; stir in cheese. Add buttermilk, stirring just until dry ingredients are moistened. . 2. Turn dough out onto a lightly floured surface; knead 3 to 4 times. Place dough in a bowl; cover and chill 1 hour. . 3. Preheat oven to 350°. Turn dough out onto a lightly floured surface. Pat or roll dough to 1-inch thickness; cut with a 1 1/2-inch round cutter, and place on parchment paper-lined baking sheets. . 4. Bake at 350° for 20 to 22 minutes or until golden brown. Note: Unbaked biscuits may be frozen up to 1 month. Bake frozen biscuits as directed for 26 to 28 minutes or until golden brown. Kevin Garvin and John Harrisson, Neiman Marcus Cookbook, Southern Living MARCH 2012 I tried to pick up recipes that looked good, were easy to make and didn't require off the wall ingr which you would pay out-the-ass-for and use this once. (I personally HATE that.) Ok, gotta run - let me know if you make any of these or have better recipes for tea sandwiches. I'll let you know what the caterer does. Catch you later :~) What a crazy weekend it was! My friends are here from NOLA so we tried to squeeze in as much as we could in a weekend. Movie Time, Olive Garden, Chili's, fast food (how did we eat so much?) Visiting friends, shopping, sitting in the moonlight soaking up the super moon, did I mention eating? WTF? How many days was it?? I was so busy eating & catching up I forgot to take pictures of the food. #FML :( So here is a snazzy picture of the take home bag, LOL And watched "Man of Steel" it was ok. I am not a fan of Superman so don't go by my review. I thought it was a little long. I lost interest. :( When will Thor 2 be out? Or Lone Ranger? Hurry up already.. Ms Y went with us to the Olive Garden and we sat out in her back yard till 1:30 a.m. soaking up the Super Moon and visiting. We all spent the night at her house. And No, I took pictures of nothing. I have a camera? Where? Sorry :( We had doughnuts a couple of times and ate out like 6 times a day. (How is that even possible?? ) Plus shopped and I remember putting petrol in my truck like 3 times! (Driving to pick up food? WTF??) And I some how managed to watch True Blood last night. (Did you see it? I was pretty good.)
I vaguely remb. getting home & thinking I will just take a short nap...but didn't get to lay down till after 1:00 a.m. - Oh well. At least we had a good time. :D Hope your weekend was good too. Talk soon! Who doesn’t want more money? Here are a few tips that I actually use (and they work!) First we need to understand where the money is going. :0 1. What do you really spend your money on? It’s ok; most people don’t have a clue how much they spend on Starbucks, movie tickets, on line shopping, etc. Write down EVERYTHING you spend for 3 months. Be honest and then you will be able to make a good decision on what’s important to you & where you can cut back. 2. How much do you actually need to be out of debt? Tally it all up and make a chart. Post it where you can see it every day. Making it a real, concrete image will help your brain better understand what your facing. Change the chart as you pay it down or add to it. 3. Start with your bank. Now you know where your money is going and how much you need to be free from debt it’s time to make some changes. Is your bank helping you or are they nickel & diming you to death? :X Check your rates and call around to see who has the best offer for your situation. (Bank fees, check fees, etc & stop paying overdraft fees. That’s just money you are throwing on the ground.) 4. Turn off the television. What? You say. Why? Because we both know it’s not really helping you. Most commercials guilt or manipulate people into purchasing things they don’t need. And you’re smarter than that. I know you are.
5. The hardest step. Make a Budget and stick to it. Use your information from steps 1-3 and put some $$ in savings, allow a little leeway and be ruthless. Just because your coworkers are going out for drinks after work doesn’t mean you HAVE TO GO TOO. (Unless you budgeted for it.) Just because there is a SUPER SALE doesn’t mean you have to shop…unless it’s in your budget. You comprendre? Be realistic, if you know you need food be honest with what you can spend and stick to it. Ok, that’s a lot of steps; I know its only 5 of the 10 I promised, but give yourself a pat on the back if you were able to do any of them. Because you took the 1st step in getting your finances in order and that’s the hardest step, beginning. I will post the 2nd half later in the week. Talk soon! Follow trends? Follow people? Follow ideas? Follow mainstream? Nope, I don't really do any of that, don’t get me wrong- there are a few people I follow and read everyday - they rock. But anything else? Nope. I wear what I want to wear, when I want to, I do my hair, nails and shoes to make myself happy, etc. But on the other hand it’s ok to follow. You can get some great inspiration from others but, do not copy or steal. That's totally NOT COOL. You know, I have heard all my life that when someone copies you/acts like you/does what you do it's a great compliment. Hmm nope, it's theft. I don't want to be cloned. I could never figure out why people did that in school. Why you want to pretend to do/be something your not? How tiring is that? I am “ye of little attention span”, call me when something happens, I will be over here reading or drawing. lalallalala skips away~~~ So one day a girl started "cloning" me at school. 1st I thought I must be imagining this. Why Me? I had friends and a BF, but so? I had my share of teenage angst too. (We had that back then, you didn’t invent it, LOL) anyway I watch and watch. What I randomly pull out of my closet to wear on Monday she wears similar on Tuesday. What I wear Tuesday she wears on Wed and so on. So I do experiment (Cause I’m all about science, right?) I wear outlandish clothes next week. She repeats what I wore week before! (Why you have better taste than me, then WHY COPY ME?) I was like WTF? Maybe it’s all in my head...but no, I go back to regular clothes and she continue to copy me. Buy shoes like mine, book bag, earrings, etc..Then she comes up to me and tries to be friends, SO I was like ok, who the HELL are you? She was just lonely and wanted to fit in. * ___ * Ok, I gave her chance & she befriended my entire group - she ended up with my BF's BFF and they got married! I was like what the??? How you move so fast?? Then all hell breaks loose and she is no longer the same person?! WTF? She doesn’t Dress, Act, BE same person as before, suddenly. The guy was like WHAT HAVE I DONE? WHO IS THIS? We were all very astonished that any of this happened. :0 My boy friend did go on later to become my hubby (years later, God rest his soul.) He went to his best buddy and told him to get an annulment. And what the HELL was he thinking? (Cause that's what real friends do. They call you on your shit & are still there when you screw up, no matter what.) This was some crazy shit! How far will you carry something like that and why? Just F’ing be yourself. IF people like you good and if they don’t then F them and you find people that will later on. NO sense in wasting your life and train wrecking other peoples. Ok story over... It’s ok to Follow your heart and me on twitter, lol But don’t clone anyone, K? Later- OMG! What a week it was... I met with the mgr of the B & B to finalize the menu for the Surprise Party. I did mange to snap some pictures while I was there. But, I only brought my iphone because I was running late. So that said...you were warned. Even with the crappy iphone camera you can see the place is lovely inside and out. I really think she is going to be surprised.
:D So, since I’m a nice person & all (lol) I usually look and “like back” anyone who likes my picts on Instagram. :D (Insert sounds of you rushing over to like my picts so I’ll like yours now…) lol Anyway, “thanks & all” but this is not a begging for likes post (I’ll schedule that for a slow day while I’m on the ship or something LOL) This is about me discovering Vegancuts. They (Vegancuts) liked one of my veggie pictures and I checked them out. They offer a monthly subscription box of Vegan delights. So I thought "WOW, this is Cool" & ordered. It's packed with different items every month to try. I wasn't hopping for much, to be honest. The box only cost $19.95 (including delivery!) AND you know how expensive Natural, Healthy Food is. So..I was quite happy with the amount and range of products. :D Also I liked the fact that it wasn't sealed in 100 LBs of Plastic/peanuts/paper. No waste packing. (I'm getting picky as I get older, I guess. But that really annoys me to have to knife a 100LBS of crap to get down to my goodies.) Ok now, on to the contents: Well, wait 1st I need to say I am not Vegan, but am a vegetarian and was just so excited that we COULD EAT/USE EVERYTHING in the box. (Remember- I am in Texas, right now & most everything here is meaty.) :( This is a HUGE deal for me. Really. So I didn't have to study the ingredients list with a magnifying glass before I tore into the food. >:0 So even if you are not vegan and just want to eat healthier, this is a COOL DEAL.
Food: Cookies were good. Chips look good. (I will save something till tomorrow, lol) The LARGE Go Veggie Parmesan Cheese was really awesome too. I am lactose intolerant and LOVE cheese so I am excited to try it out. There were some coupons + other things that didn't really show up in the picture. OH! And the lip balm is AWESOME. :O (It’s on top of the Go Veggie & now in my purse!) Over All: I say the box is a "winner" and will go for another next month.
