How are things? Busy as usual here. We have been having summer storms and lots of rain and lightening. (I just LOVE IT!) Who says it never rains here? It has been as constant as Florida for 3:00 pm rain showers. #setYourWatch I did manage to sneak off, in between the thunderstorms for a bit of shopping. Furnishing a new house, as much as I complain about it, is really a lot of fun. Also this week I was invited to an art exhibit in Santa Fe and I found a place close by to do yoga, so I am settling in. I bought a couple of new pieces of art for the house and a new sectional for the downstairs lounge, too. Plus I also braved the mall. Show you the art as soon as it arrives. (No, it's not southwestern.) Sleep has become my drug of choice lately, lol.
How was your weekend? Did you rest or do anything fun? We have a long holiday weekend coming up soon, too. I actually will be gone - so be on the look out for blurry airport pictures, lol. Catch you later- How are things? Seems I'm fake baking and trying new, amazing raw recipes more and more. You know why? Because the food tastes so good! I usually make a "traditional" supper but during the day eat raw. Here are a few of the dishes I've made lately. Are you tired of looking at my Nice Cream and breakfast bowls? I don't really care, cause I am so in love with them! Truffles, energy bites, etc. I'm not sure what to call them other than GREAT! Rolled in coconut, packed with cacao and coffee or peanut butter. They are easy to make and easy to eat. The surprise is that they are good for you and so filling! I have also joined the ranks of avocado chocolate pudding lovers. And this easy, raw pudding is also very my new "go to" for company. See the Recipe below. Cacao powder is the key to stopping those crazy chocolate craving you could be fighting. Why eat a candy bar full of crap when you can have raw, delicious and healthy super food? I didn't make vegan whipped cream, but I added sliced almonds and coconut as a topping. OMG! This is a dessert that anyone would want! Y And everyone and I mean EVERYONE pretty much licks the bowl! Here is my recipe: Ingredients
Top with coconut, nuts or berries. You can serve at room temp but I find it’s best when chilled in the refrigerator for a couple hours. Store leftovers in an air tight container in the refrigerator for up to a couple days. So easy and so good! Oh My! The Vegan's Cut August box just arrived!

I had a wonderful time while I was off...pictures to follow of some of the fun and while I was off I had to go shopping for fresh produce and goodies. I'm making a trip to ABQ later in the week to buy bulk (oh yeah) so this was just a few random items to top me off till then. Did you know it is still raining most every day here? It is so nice! Yesterday I got to see some lovely clouds and a rainbow! It reminded me of the time I spent in the French Alps for my birthday. Maybe I will return to the Alps soon, you never know. I have a pantry, cupboard and rack full of food, but there are a few new "fake bake" recipes I want to try out this week so I purchased a bit more to experiment with. I also have a Thrive Market order and Amazon Pantry order arriving any day too. Now on to the rainbow.... (ignore my dirty windshield, please.) They are super short clips. Did you see the rainbow? Okay, I pulled over and look! And also I want to say a BIG THANK YOU to all you kind, loving souls who sent me birthday messages. I am so touched that you read my silly little blog and took the time to write. You guys rock!
See you at the airport~ I'm in New Mexico, surrounded by nature, the stars and good friends. This has been an Epic Birthday week and it continues... No actual sleep last night. We were out in the back garden, watching the bats and shooting stars. This entire month has been so much better than last year! OMG!
But enough of that crap, it was, what it was and now things are back to being awesome again! How awesome? Well, I booked a short trip for the end of the month, (#Excited) and I may be going to Santa Fe in a few days! But for now, I'm going back to bed... Hello, How are things? I know it's not the weekend yet. BUT it's my birthday weekend so we are going to start the fun now. My birthday last year sucked large, ugly balls,,,so my friends are making sure this one is better. I just went through the archives for last August looking for 2015's boring birthday entry. Honestly, it was so blah I didn't even write about it. I was packing up to move from England, I was still fighting a summer cold and my marriage was ending. #GoodTimes So I think just about anything will beat that shit for birthday fun. #Truth My dear friends have promised me no parties or surprises, just a low key weekend of fun, exploring and chillaxing. Hey there, As you know I've been working non stop. (Insert sobbing sounds here.) I was able to schedule errands, meetings and clients successfully one day this week. I ran out of one meeting (cheering because it went so well)! And then to a local Mexican food restaurant for the next round of meetings. I hired a new assistant here in New Mexico and am excited to see how things are going to progress now. Over all the meetings and interview went really well and I even had time to wolf down a taco! The food was really good but different that the Tex Mex style of food we have in South Texas. Here the Mexican food is called "Southwestern Cuisine" Same types of food, just different spices and different terms. The cafe was cute, too! (I video'd the place lol, for snapchat but didn't save it.) I have a trip coming up in less than 2 weeks and have already thrown a ton of work on the new Admin. Hopefully with his help I should be able to return to my normal eat, sleep, travel schedule, lol
Speaking of travel, I'm planning a couple of short trips to hike the hills here and see the Indian Pueblos in depth when I return in Sept. I can't wait to see the leaves change! I admit to being online too much and not out with the trees as much as I should. (Yes, they have trees here in New Mexico!) I went to explore the village a bit and picked up some fresh veggies, these are a few of the random pictures I took. Most of the pictures now go directly to #Snapchat and are of course gone now. What do you think of Instagram new feature?I don't think it will replace Snapchat....but who knows. Please enjoy looking at the JC candles and incense collections from the supermarket. I am surprised at how much shopping there is in my tiny village! Big Lowe's, Home Depot, lots of small family owned shops, and a decent sized library. But sadly the 2 supermarkets are very expensive and have only a small section of organic produce and products. #Fail Thrive and Amazon are much cheaper..or I can drive on to ABQ. Catch you later...
