In today's video I'm on a mission to find the Texas fishermans monument in Palacios, Texas.
Can we do it before the storm blows in? Are you craving popcorn? I am and I blame it on autumn. For me autumn is a season associated with comfort and coziness. It's the time for warm sweaters, cozy blankets, and gathering around the fireplace. I want to watch my favourite old movies and drink hot coco and snack. Popcorn fits perfectly into this scenario as a light, easy-to-make, and warm snack. It also adds to the overall feeling of comfort and home. Its crunchiness and warm buttery aroma make it an ideal treat during those chilly evenings or any time. Carmel popcorn seems to be an even better treat. But OMG the amount of sugar is so dang awful. But what if we could cut the refined sugar and take it up a notch and turn it into a vegan treat? Plus add maple AND cinnamon for a super cozy Autumn vibe? Are you ready to try this amazing popcorn?? Vegan Maple Cinnamon Popcorn:
Ingredients: - 1/2 cup popcorn kernels - 2 tbsp coconut oil - 2 tbsp maple syrup - 1 tsp cinnamon - A pinch of salt Instructions: 1. Pop the popcorn kernels using your preferred method (air popper or stovetop). 2. In a small saucepan, melt the coconut oil and maple syrup over low heat. 3. Stir in the cinnamon and a pinch of salt. 4. Drizzle the maple-cinnamon mixture over the popped popcorn and toss to coat evenly. 5. ENJOY! Enjoy these tasty treats without refined sugar! ![]() Have you ever had one of those days when everything is going just fine, and then suddenly, it takes an unexpected turn? Well, Monday was one of those days. My adventure began with a simple plan: After a long day of work I wanted to bake some delicious stuffed jalapeños to snack on as I caught up on emails, texts and messages. I had everything ready, from the tofu, (it was drained and pressed,) to the jalapeño peppers. But when I reached for the peppers, I found only one lonely jalapeño remaining. Where did the other nine disappear to? It was a tragic culinary mystery! In moments of doubt, I believe in going with the flow and embracing spontaneity. So, I decided to scrap the jalapeno recipe and improvise. I grabbed some breadcrumbs and coated the tofu, I also added a few spices and off we went to the air fryer. I air-fried the tofu until it turned golden brown and crispy. Admittedly, I should have pressed the tofu a bit longer, but it turned out surprisingly well. Just as I was about to tuck into my tofu creation, there was another twist in store. The power went off, which was a surprise as it was a sunny afternoon. No storms or even any rain on the horizon. As I sat eating my tofu by candle light, I couldn't help but think about the simple pleasures of life and what we take for granted. For instance, electricity? Don't get me wrong, I wasn't worried, the cozy cottage was well-stocked with an abundance of candles, matches, lighters, etc. It was a pleasant weather and I had plenty of fruit and snacks to eat without cooking, but it was still an unexpected occurrence. Actually the thought of a slow, candlelit evening brought a smile to my face. My trusty Mac had a fully charged battery that should last for six hours, ensuring I had a source of light and entertainment. On the other hand, my cellphone and the all-important mobile hotspot were hanging on with less than 10% battery. However, the idea of being disconnected from the online world felt like a welcome respite. After numerous work meetings this week, I was grateful for this brief break, even if it meant sitting in the dark. Could this be a message to slow down? As I settled into the stillness of the darkened cottage, I contemplated the beauty of simplicity and a quiet evening. This was probably just what I needed to recharge and rest. It was during this moment that the power suddenly came back on. In retrospect, this unexpected power outage turned out to be a valuable reminder to unplug and rest. It reminded me of the importance of taking a break from the constant chaos of the digital world and appreciating the simple things in life. So, while the day didn't go as planned, it was a reminder that sometimes the unexpected can bring us the most valuable insights.

On Saturday, October 14, 2023, we watched the 'Ring of Fire' annular eclipse as it made its journey across the United States. Our chosen location? The gulf coast of course! I made some snacks and off we went to claim our spot for the watch party. We ate, chatted with friends and watched the wildlife as the sky become darker and darker. The light changed as the eclispe progressed but didn't go fully dark. It was an odd feeling as the light changed from a "normal morning" to a murky twilight. You can see the difference in the light quality in these pictures taken as the eclipse was happening. All of this happend midmorning for us in South Texas. The next annular solar eclipse over North America won't be until 2046. So we were very happy to be able to watch this event. My son built a special viewing device so we were able to safely watch, but it didn't allow for taking picture. But what we saw through the device looked very much like the picture above. Across town on another stretch of private beach there was an elaborate wedding taking place. I drove around and saw tons of people gathered to watch and just be together all over town. There were many family parties and get-togethers. It felt like a celebration all around us. I'm so glad we were able to watch this magical event. Speak soon! Today, we're all set to observe the 'Ring of Fire' annular eclipse as it makes its journey across the United States. The eclipse is expected to reach its zenith over the Gulf Coast of Texas, roughly between 10:00 - 11:00 a.m. CT. We've planned out this adventure and are excited to be part of the watch party! Before we leave, I've made some snacks to keep us going throughout the day. I whipped up a batch of breaded tofu, (cooked in the airfryer,) banana /peanut butter smoothies, sliced veggies and hummus. It looks like its going to be an amazing day, with clear skies and cooler temps. Finally the heat wave is breaking! I've got to pack the car and then we are off.
More about this adventure soon~ Happy Friday! I am continuing the search for a vegan banana pudding / banana bread mash up. It's tough work but someone must try all these samples, lol. Of course, I used banana nice cream for the base, added in more sliced bananas, coconut whipped cream, walnuts and made a maple sauce for the topper. It was actually amazing, but may require more sampling.
