Catch you later. How are things? Seems I'm fake baking and trying new, amazing raw recipes more and more. You know why? Because the food tastes so good! I usually make a "traditional" supper but during the day eat raw. Here are a few of the dishes I've made lately. Are you tired of looking at my Nice Cream and breakfast bowls? I don't really care, cause I am so in love with them! Truffles, energy bites, etc. I'm not sure what to call them other than GREAT! Rolled in coconut, packed with cacao and coffee or peanut butter. They are easy to make and easy to eat. The surprise is that they are good for you and so filling! I have also joined the ranks of avocado chocolate pudding lovers. And this easy, raw pudding is also very my new "go to" for company. See the Recipe below. Cacao powder is the key to stopping those crazy chocolate craving you could be fighting. Why eat a candy bar full of crap when you can have raw, delicious and healthy super food? I didn't make vegan whipped cream, but I added sliced almonds and coconut as a topping. OMG! This is a dessert that anyone would want! Y And everyone and I mean EVERYONE pretty much licks the bowl! Here is my recipe: Ingredients
Top with coconut, nuts or berries. You can serve at room temp but I find it’s best when chilled in the refrigerator for a couple hours. Store leftovers in an air tight container in the refrigerator for up to a couple days. So easy and so good! Oh My! The Vegan's Cut August box just arrived!

Between work (didn't I say I was taking off the month of May to move? WTF?) Packing up to move, friends in crisis, crazy flooding weather conditions and company, things have been insane. But on the bright side... I received both a Thrive order and the May Vegancuts snack box this week. At least we have plenty to eat, if I could only slow down long enough to sample them. The selection was good and the prices were not too bad. Thrive is a yearly subscription company that offers wholesale prices on organic, healthy food and household items. They also give back to the community. I didn't feel the prices were actual wholesale though, or if so only a few pennies cheaper than other online stores. Some of the items were comparable to my local market in prices. Still overall I was pleased with the order. The free shipping took a full week to arrive. (Amazon Prime has me totally spoiled.) But the box was well packed, the order was complete and the items were fresh. I'm signed up for a year, so I will place another order next month and decide if I want to keep it or not. Now on to the May Vegancuts snack box: I have not ordered Vegan cuts in over a year because we were living out of the US. It seems like there is a lot MORE food than I remember in this box. Hello, How are things? It's one crazy day after another here. I am thankful, as always to have so many good friends here in Texas, but boy they are keeping me uber busy! Unfortunately, I have had to turn down most invitations to dinners parties, girl's movie night and road trips the last few months because of work and the fact that I really don't even have time to sleep, much less do anymore than I'm doing now. (Ms. One World is really no fun at all boys and girls, sigh.) But the last few weekends I have been just giving up on the idea of sleep and going out on adventures anyway. And honestly I am so GLAD! We have had so much fun. It's great to see my old friends and laugh again! So between sneaking off for dinner or a couple of parties, I've been trying to pack up for a long weekend away. The weather is really unpredictable right now. All over the US...from heavy rains, storm and snow to droughts. So what to bring? And now that I seem to becoming a 80/20 Raw #Vegan there is that whole other problem of how much food/(not) cooking equipment to bring with me. I wonder how other Vegan/Raw people do it? As soon as I get it down I will do a packing list post, I promise. I find the smaller blenders actually fail...my small food processor does fine though. So which to bring and how much coconut oil, cacao and nuts to pack? You cannot count on finding these items at just any market. And making raw ahead is okay, but with no preservatives you have to be aware of shelf life. Speaking of, did I tell you I tried out a recipes for raw peanut butter cups? I think I should have smoothed the PB down more or added more chocolate (cacao) to cover the lump of organic peanut butter, but this was the first run. It was an experiment for a vegetarian friend who I think will love them. I'm pretty sure I can tweak the recipe to make them vegan. (#Goals) My taste testers graded them 5 out 5 on the "please give me more" scale. So I was more than pleased with the results. It still amazes me how easy it is to make raw and healthy foods. Who knew?
Next Step: Figure out how to transport them safely on the trip. Meaning more stuff to pack and explain to the TSA about. See you at the airport~ 3 very ripe bananas peeled, cut up and frozen overnight. Next morning Add 1 cup natural almond milk and a bit of natural peanut butter to taste in cheap electric blender. Blend in blender and enjoy!
I ate this wonderful Nicecream and felt so good after that I went for a 2 mile walk. 😊 Good morning and happy Thursday. It's almost the weekend, are you ready? :D When I think of the weekend I think of Pizza. Do you? I guess its ingrained from my school days? Or just the happy memories of a care free time when we could all get together, eat pizza and hang out. You know, laid back weekend fun. But in trying to eat healthier I really MISS PIZZA the MOST. #ImNotGoingToLie I was very happy when I rec'd the May VeganCuts box complete with all the makings for a #Vegan Pizza included. #Score! Plus there were a lot of other goodies too, see all the loot? I followed the directions on making the Pizza dough and to be truthful I didn't expect much. Most Gluten free products taste only a bit better than the paper they are packed in. This mix called for Club Soda to activate. I made a trip to the dollar store in search of club soda (Does anyone still drink that?) and then began with the crust. I added the soda and a dash of olive oil and let set for 3 hours. So it was NO WORK AT ALL. I made 2 smallish pizzas. Sorry the picture is so crappy, but my family is knocking me over to gobble them up! The report is: BEST CRUST EVER and possibly the best pizza we have had in years. I was so shocked (and HAPPY) I went online and ordered 2 pkgs of crust mix that night! The weather has been superb so Saturday morning I went over to my mums and experimented with the new Steel Cut Oats from Amazon (click here to read about my order). They actually turned out quite good. Not the typical "American Oatmeal" whatever that is?! WTF?! I have never really thought too much about oatmeal. I am too busy thinking about things like.... Anyway, enough of that now back to the oatmeal. It was quite good. I cooked this batch for 20 minutes and it was still chewy, which was quite different, but tasted ok. I added vanilla almond milk and ripe bananas and it was much better. I will make it again, esp. on those days I am out running low on fruit for breakfast. I left a pkg with mum (#GoodDaughter) for her to enjoy or give away, whatever. From there I went home and chilled. I read and relaxed like I hadn't a care in the world! And later in between phone calls and texts I was finally able to finish my book. I finished the night off with a long soak in the hot tub under the stars. #HEAVEN or BEST WEEKEND EVER! Lol Sunday a.m. was yoga. Even though I stayed up late it was so worth it. I always feel better after morning yoga. I then met a friend for a picnic. I brought tacos, lol And he forgot the blanket.... This only lasted for a second...There are too many deadly things in the grass. #ImBeingTruthful So we opted to set in the bed of the truck to eat and watch the clouds go by. Catch you later- Hey and Happy Weekend! Its Friday and that's close enough, right? Yesterday was probably the most productive day I have had all year or so far. I don't feel like I've been slacking but...I accomplished so much and tore through the To-Do list. #Score! I might even be ABLE to leave for my next trip now! LOL Most of the day was spent on the computer, on the phone and then running errands. It seems knowing a trip is approaching really does motivate me, lol. I planned on snapping photos all day long; of the stores, sunsets, pretty flowers, FOOD, etc. But I was honestly too busy. #AlwaysA1stTime So most of the pictures would have looked like this... DAZED AND CONFUSED and working away. I priced the steel cut oats at the super market and they were $6.00USD for a small can. This was a much better deal. The whole order was $51.07USD and Prime is of course free 2 day shipping. So it wasn't bad at all for all this healthy loot. I will review the oats and my attempt at making Almond milk this weekend, if I have time. I actually am very excited to try the milk making process. Buying the pre made milk adds up $$$$ and you still have to read labels to see what is added. Everyone on line says its supposed to be super easy, so we shall see! I ordered this monthly box for my employees, (because I love them.) It is delivered to the office and they eagerly sort the goodies each month. Admit it, you like getting something in the mail that's not a bill too, right? :D Overall Office rating? Loved it! It's nice to try new products and see whats out there. Plus full size items means that we can share and sample more. #Organic and #healthy means we will purchase, even if the price is slightly higher. Hello World, Hope things are going good for you. Been really busy here. Sorry for the lack of updates.. I promise to do better. Many things have been going on lately, actually massive amounts of Good things are going on, but they just leave me with no time to write. I'm headed to San Antonio this weekend for a little R & R. When things settle down I plan on spending a day or two laying by the pool, soaking up the sun & doing nothing. Then I'm sure I will organize my pictures, trip notes, etc. and will be posting like a mad woman. Or probably more realistically I will be sleeping, so it could go either way, lol. #Truth Meanwhile, I rec'd the March Conscious Box. #Score! I stepped outside to take a few quick pictures before the rains started. It has been raining just about everyday here, which is great, but before i could get many pictures it was pouring. See raindrops beginning on pictures? #Opps The theme this month was Lucky. They were doing a give away with a clover. Did you find one? And LOTS of other Good things. This box is mostly organic items that you (or at least I) never knew existed and NOW CANNOT LIVE WITHOUT.
:O See the Crystal Deodorant towelettes? Super great to throw in gym back or pack back. Never know when you will need them. Also see the pink ribbon on the package? I think this maybe the ONLY one that breast cancer ass. has approved for use. Meaning THIS WILL NOT GIVE YOU CANCER like so many other deodorants. #WTF?!?! :O Before I could snap anymore photos it was pouring. So I ran into the office and it was all over.. My co workers were letting me take pictures before they started going through the loot, lol. Everyone loves these boxes so much! I am thinking of upping the subscription to 2 boxes.
