![]() Hello, How are things? It's one crazy day after another here. I am thankful, as always to have so many good friends here in Texas, but boy they are keeping me uber busy! Unfortunately, I have had to turn down most invitations to dinners parties, girl's movie night and road trips the last few months because of work and the fact that I really don't even have time to sleep, much less do anymore than I'm doing now. (Ms. One World is really no fun at all boys and girls, sigh.) But the last few weekends I have been just giving up on the idea of sleep and going out on adventures anyway. And honestly I am so GLAD! We have had so much fun. It's great to see my old friends and laugh again! So between sneaking off for dinner or a couple of parties, I've been trying to pack up for a long weekend away. The weather is really unpredictable right now. All over the US...from heavy rains, storm and snow to droughts. So what to bring? And now that I seem to becoming a 80/20 Raw #Vegan there is that whole other problem of how much food/(not) cooking equipment to bring with me. I wonder how other Vegan/Raw people do it? As soon as I get it down I will do a packing list post, I promise. I find the smaller blenders actually fail...my small food processor does fine though. So which to bring and how much coconut oil, cacao and nuts to pack? You cannot count on finding these items at just any market. And making raw ahead is okay, but with no preservatives you have to be aware of shelf life. Speaking of, did I tell you I tried out a recipes for raw peanut butter cups? I think I should have smoothed the PB down more or added more chocolate (cacao) to cover the lump of organic peanut butter, but this was the first run. It was an experiment for a vegetarian friend who I think will love them. I'm pretty sure I can tweak the recipe to make them vegan. (#Goals) My taste testers graded them 5 out 5 on the "please give me more" scale. So I was more than pleased with the results. It still amazes me how easy it is to make raw and healthy foods. Who knew?
Next Step: Figure out how to transport them safely on the trip. Meaning more stuff to pack and explain to the TSA about. See you at the airport~ Comments are closed.
