How are things? Super busy here with work and life...I needed a break so we took a quick trip to the Isleta Casino in Albuquerque. It's back to business as usual now. #YEAH! It was really great to get out, but now I'm back at work. (Insert sad face)
But it's okay, I have several BIG trips coming up this summer so I don't mind. Stay tuned for more recipes, and travel adventures. Hi, How are things? I hope all is well in your world. I was out running errands this morning and stopped at a store to grab a case of water. While I was looking for it I walked down a housewares aisle and a pillow (jumped) fell out off the shelf. I'm taking it as a sign that good things and amazing adventure are on the way! Have you ever had that happen?
No one was in the aisle and I didn't bump or brush against it. Odd, right? I'm sure the travel Gods are trying to send me a message - I'm going to start packing... Have a great weekend Hey, Hey! Hope your week is going good! The weather has been very good lately so I've been out exploring! I wanted to learn more about the Acequias (Irrigation ditches) that are in my area. Some of these ditches date back 400 years! The Spanish built these to irritate what is now souther Colorado to central New Mexico. Some have been redone and others look very much like they did when they were first built. I created a short video here if you want to check one out. In an area where it almost NEVER rains seeing water flowing seems almost unbelievable. Besides all the history associated with the water ditches there are also politics as the state grows and changes. You can google if you want to know more, I don't feel qualified to weight in on it.
I have another out of state trip planned in two weeks so I need to get packing.. How are things? Hope all is well in your world. I had business in Roswell at the end of April so we made a quick trip. There was no "touristing" this time, as it was a short visit. Roswell actually have a lot to see. From the lake to the alien tours, it a nice place to visit. + I really do love the kookiness of the city. They do embrace the alien theme and celebrate it! Most of the hotels are clustered together -- I looked at vacation rentals but it was a last minute trip and they were all booked up.
You know my love for Roswell :o (To look at alien pictures and other fun Roswell stuff click here.) So when I saw a walking challenge come up for Roswell I was hooked! This challenge was 44 miles or 77 KM. I did it in February and really enjoyed the interactive pictures and timelines the Pacer App included in the challenge. I also made of note of a couple of new places to visit! And here is my newest medal: I'm currently working on the next challenge. It's Casablanca and I should be finished in about a week. It is 67.1 miles and I've walked 35 miles so far. It also comes with a medal. I have other walking/step counting apps BUT Pacer have been the most motivational. I talk to people every day (all over the world) we congratulate each other on our progress and encourage each other. After dealing with long haul covid I NEEDED this additional support and it really has made a difference. So if you want to get more active and find a community of supportive people I highly recommend this app.

The world continues to be chaotic with trouble brewing everywhere and it's easy to become overwhelmed. It's important to slow down and take care of yourself. Read a good book, watch your favorite film and eat good food. The weather has been more than a little odd, too. Winter is hanging on with unexpected storms rolling in here. I broke out the soup pot and made a satisfying recipe I adapted from a much more involved recipe I found on line, late last night. It came out so well I wanted to share it with you. If you are looking for a hearty, satisfying stew to warm you up (Note: Its Spicy!) then give this recipe a go. Prep time is minimal and you probably have most of the ingredients on hand. This spicy Moroccan-Inspired Chickpea Stew cooks quickly and makes a satisfying meal.
Prep time: 15 minutes Cook time: 25-30 minutes Serves: 4 Ingredients: 2 T. extra virgin olive oil 1 small red onion, diced 2 medium carrots, diced 1 medium red bell pepper, diced 3-4 garlic cloves, chopped Sea salt and black pepper, to taste 2 T. tomato paste 1 T. ground cumin 1 t. smoked paprika ¾ t. cayenne pepper 1 15-oz. can chickpeas, rinsed and drained 1 15-oz. can crushed tomatoes 2 c. butternut squash, cubed 2 c. vegetable broth or water 2 c. kale, tough stems removed and chopped 2 T. fresh lime juice Directions:
How is it already November?? September and October flew by because life was so busy! We took a road trip to Roswell, New Mexico, then returned home, repacked, and took a month-long road trip to Texas. #Yeah It was great to be able to travel again! We also went apple picking, (worked of course), made a couple of videos, baked, met up with old friends, and chilled at the river and the lake. Oh! And there was also a hurricane hitting Texas while we were there and we had to nix the beach part of the trip. "More than 100,000 Texas electricity customers without power after Nicholas.
